We aim to buy fresh fish sourced from well managed stocks available at Billingsgate, our local market. Overfishing of popular species such as cod and skate has caused serious depletion of these stocks. You can find out more about the species to avoid and those to eat at FISHonline

Our meat is supplied by G G Sparkes Butchers, listed in Rick Stein's book "Food Heroes" and one of the very few London butchers certified to sell organic meats. Most of the meat we serve is organic, including the beef for our tasty hand-made and char grilled beef burgers - see for example our 29th May, 2008 delivery note.

Our chickens are supplied by S J Frederick & Sons, a traditional family farm in rural Essex (www.labelanglais.co.uk).
